I am so sorry you lost her. Please take comfort in knowing that your time with her greatly improved her life.
I can't really answer your medical questions, I suppose it is possible for any female parrot to become a chronic egg layer. Usually this just happens in cockatiels and budgies.
I think you should give yourself some time to grieve and think, and then if you want to get another bird you should. There are always older birds out there that need a home. I lost a cockatiel to egg yolk peritonitis infection and she wasn't even a chronic egg layer. About a 1/2 year later I got my SI ekkie Gracie.
